With the arrival of Autumn, I have found myself stocking up on lots of produce high in vitamin C to ensure my family and I’s immune system remains strong!
This ‘Vitamin C Tea’ is the perfect remedy for when you’re feeling cold, a little run down or if you’re already experiencing cold or flu symptoms.
Whilst this tea takes a little longer to prepare than other teas, it will provide you with a hefty dose of vitamin C and has the perfect amount of sweetness and spice.
If you would like less sugar in your tea, I would recommend you using less pineapples and adding another lemon. This will alter the taste of your tea, making it a little bit more sour, but it will still provide you with a generous amount of vitamin C.

Cooking time: 25 mins
Ingredients:
- 30g raw ginger
- 160g pineapple chunks
- 2 medium pink lady apples
- juice from 5 lemons
- 300ml filtered water
Method:
- Chop up your ginger into about 3 or 4 pieces
- Chop up your apples into roughly 12 pieces each, and be sure to remove the core
- Add your chopped ginger, apple pieces, pineapple chunks and lemon juice to a food processor or blender and blend until relatively smooth so that there are no visible chunks of the produce remaining
- Pour the mixture into a saucepan and add the water
- Boil on high for 8 mins, (keeping an eye on the pan so that it does not boil over)
- Bring down the temperature to medium heat and boil for at least 10 mins (the longer you keep the mixture on, the stronger it will be)
- The next step is to sieve out the pulp and add the liquid to a heat proof vessel that you can store it in
- Serve immediately or store in the fridge and heat up when you’re ready to drink
