Refreshing Watermelon Juice Recipe

Summer in England may have arrived incredibly late this year, like September late, but it’s finally here, so we have only once choice but to make the most of it while we can! If you find yourself working from the garden on a warm afternoon, here’s a refreshing watermelon juice recipe to keep you cool whilst savouring the limited sunshine.

As we all know, watermelon is synonymous with summer. Its juicy, sweet flesh is the perfect antidote to the heat, and when blended with hydrating coconut water and zesty lemon juice, it becomes an irresistible summer beverage that will quench your thirst and invigorate your taste buds. You can even get creative with this recipe by adding mint leaves or a splash of sparkling water for an extra dimension of flavour.

Serves: 4 | Prep time: 15 mins

Ingredients:

• 350g diced watermelon
• 400ml coconut water (I used the Coco Loco brand from Aldi)
• Juice from ½ a lemon

Method:

1. Add all your ingredients to a blender and blend until smooth.
2. Pour a glass for yourself and enjoy!

Storage Tip:

This refreshing watermelon juice can be refrigerated in a carafe or a suitable container and will stay fresh for approximately 3-4 days.
